Katwa Gosht/Meat
Asslam O Alikum Friends, Welcome to my new Blog. Today we are
going to make a special traditional Katwa Ghost, Katwa is called a big earthen
pot and the Meat should be cooked inside it. For hours, these are the
traditional dishes which are made by the free-spirited people of Pakistan like
this one which if we talk about this special dish, this in Attock district this
is very famous there. Is it Haripur Hazara or Hazru, there this dish is
prepared in every function in every station and it is a special part of their
career that in the area which is also inside Pakistan, we will roll the dish to
them to know how it was made. The most special thing inside this recipe is that
it is an Earthen Vessel. You have to use only an Earthen Vessel because for the
time for which we have to cook it inside it. There is not taste inside a Silver
or Steel Vessel, here we could never come up with a taste inside an Aluminum Vessel
which is there in an Earthen Vessel, that is why all the traditional experts
say that the taste of our culture was in the earlier Earthen Pots. When the
food was eaten, we will try to retain the same taste. Another special thing is
that if it is cooked on Fire, then I am using tandoor so our difference is here
will not come and the third one which part of Meat we need to use but I am
using Neck Part of Meat which is more tasty and Power Full. And I am using Goat
Meat, I have kept it a little bigger don't make it too rough I have 3 Kg Meat,
we will put in the Vessel, Now let me tell you a method for 5 kg Meat, then in
5 kg Meat you will add 1 kg of Onion, if you want to add Tomatoes then 1 kg of Tomatoes
will go there, if you reduce it accordingly, then this is my nearby, if we ask
a question 3 Kg Meat then we need at least 650 grams of Tomatoes and Onions, so
I cut these onions and keep them, they are heavy enough for you to cut and it
cooks for 3 to 4 hours, so there is no problem in getting it cooked. We have
inserted in Ginger and Garlic paste here, almost 2 to 3 table spoons. Keep the
calculation of 1 table spoon for 1 kilogram, so about 3 table spoons are made.
To do this, you have to put about 3 glasses of water in it and now we let it
cook here. So that the Meat gets cook well, you just keep stirring it for half
an hour at least, now let it cook here, about half an hour has passed, Water, Ginger,
Garlic and Onion are cooking in there. We will put our Spices inside it 3
teaspoon Salt 3 teaspoon Red Chilli and 1 and half teaspoon of Turmeric Powder we
will put inside it I will let it Cook for more about 15 to 20 minutes so that
the Masala will mix in Meat well, about 15 minutes will pass here so it's time
to put the Tomatoes inside it. Tomatoes are about 650 grams which can be finely
sliced ​​and stire a spoon in side it after some time here is gravy ready and the
tomatoes will become soft at the same time, so it will take more time to cook drain
the water from these Tomatoes and let the water dry up. Cook them for about 10
to 15 minutes on high flame till the Tomatoes are cooked so that the onion is
properly cooked and the Tomatoes will remain with leaves we need more cooked it
for 20 to 25 minutes, the tomatoes water inside it is almost cooked, now it has
become a masala inside it, so inside it we will add 3 teaspoons of Dried Coriander
for better flavor only dried Coriander is used inside it. The aroma is very
good it will come inside it so add this Coriander and cook it. You have to melt
the Meat and water it well. If your work is done then you can add more water. I
am expecting it to take around 40 minutes in total and it is almost boiled,
first I have thawed it, now it is the raw flavor of the masala which is made
inside, we will fry it well, which is the Local Method, our all local Dishes
made by like this, I am adding Ghee which are more than one cup. If we are not
add Ghee so Meat will not fry well, , it will take 15 to 20 minutes
comfortably, so cook it well, do not be in a hurry, know Meat is become very
soft know, so now i will put water inside it, this is the quantity of water, it
depends on you but I added about 2 Glass, so know let it cook well so that know
Ghee comes up and the gravy is ready this will be proper here, now we will cook
it on low flame for about half-a-quarter of hour here, , all this timing
increases because it has to be made more soft, If less time was required, then
I would have cooked it on low flame for about half an hour so that the water
gets absorbed properly, otherwise its flavor will not come, so it will have to
be cooked for about half an hour. Keep an eye on the fact that 45 minutes have
passed after adding the water and see its condition. If the water is reduced
enough then the cart that will fall inside it will be formed. In this way, the
broth should not be so thin that it will spread over the roti. Here in Pakistan
Chori is eaten traditionally which are Meat and Gravy was prepared along with
the Roti, know I will add white Coriander will go into it, we will Grind good
quality Garam Masala ourselves, equal to about quarter teaspoon, and add it
now. Will put it here, these two things have been added, it will smell very
sweet inside it, even without the Garam Masala the fragrance is amazing the way
they have prepared it. Its flavor is unmatched. Almost 15 minutes have passed
since I kept it and now I will take whatever is going inside it that it is hot that
is why I am getting excited, even from a distance, this is our hot and look at
the meat. Our Katwa will be taken out in an Earthen Pot. The special thing is
that it will also be served in a similar Vessel. Our Katwa Meat is completely
ready, it is excellent and how tender it is, the Meat has separated from the Bones
of course that is another meat. It is also soft its flavor is amazing, what is
the flavor in between, it is also accompanied by so many simple spices. There
are no special spices in it, just Garam Masala, Coriander, Salt and Pepper have
been added, but the strength and flavor of it is all because of its process.
