Lahori Chanay Recipe


Assalam O Alaikum, Welcome to my New Recipe Blog. Hope you all fine who visiting on my Blog Thankyou. Today we made Lahoori Chickpeas. There are 3 to 4 Recipes for making green Chickpeas, out of which i have shared one recipe with you and today i will share another recipe because it is very easy and very interesting, its taste will be exactly like that. If we get it in the market, let's start. I took 500 Gram of Chickpeas and soaked it overnight by adding half a teaspoon of Salt and half a teaspoon of Metha Soda(Local name). I slept in hot water and woke up in the morning and saved this water, it is not like this because it will be useful to us in time and look at this, i have not boiled that much, matches have been made easily, if you want to use it and then let us start making them. The first thing I do is put oil in the pan and let it heat a little, a little more oil will go into the roots and you put whole Garam Masala in it, for which I have taken 2 Cloves, 1 Star Anise, 2 Cinnamon Sticks and 7 to 8 Black Peppers have been added first let them heat a little and then we will add 1 spoon of White Cumin Seeds now we will mix all these and fry them for 1 minute. There is a fear of the white Cumin Seeds getting burnt, hence 1 minute. We will not fry it for more than 1 minutes and will also put it on the Onion  paste. I had taken a big sized onion and made a paste of it by making the paste, a very good amount of Gravy will be made. Now we will brown it a little. We are doing this because the color of the Chickpeas is a little light brown in color, that is why if we reduce the onion a little, then only the color of the gram will give us color, as we are buy from the market, so see, its color has changed, it is a little light. It has reduced, now we will add half a cup of Curd in it. Curd will also give a very good flavor and if it is a little more clean, then we will mix the curd as we add it. well, for which we will keep stirring the spoon so that the curd gets mixed well. If the curd releases water then that water will be fried in it itself and let me tell you that I have added fat to the curd, it will just take 2 to 3 minutes and the method is to add water. The water in the curd will start to curdle completely, it will remain a little then we will add Spices in it, this will be beneficial for us, we will have to add water to the spices separately and mix them. We will not have to forget that we will fry them well in the curd water itself, so that in which I have to take one more minute and the water of the curd is in some place, so see that the water is completely dry, it is a little bit, so now i am adding Spices in it, I have added half a spoon of Salt, 1 spoon of Coriander Powder and half a spoon of crushed Red Chilli, i have added less Salt because when we have boiled it. There was also Salt added in it, so now we mix it well, so we mix it well, before boiling it, we have to wash Chickpeas after that we have to boil it because we have to need boiled water will be required, so Spices will be roasted well, so now I will put the boiled Chickpeas in it. Mix the Chickpeas well till the spices in the Chickpeas taste well. This will also take just a minute and the Chickpeas will be cooked well. From boiled Chickpeas itself made a paste from one cup of Chickpeas. If we put the paste in Chickpeas then it will become a very rich and thik Gravy, so for this we neither had to boil Potatoes nor we had to use some dal, so in this we made a paste from boiled Chickpeas and we will put it in it, so see this, Chickpeas will be fried well, the oil has seprate, so this is the paste which I have prepared. Now we have prepared it with Chickpeas and water of Chickpeas. Now we will add it and it also mixes it well. The gravy that we bring Chickpeas from the market is sufficient, it is because of this that it is paste of Chickpeas is put in it, so look like I am mixing it, it is making quite a thick Gravy. Now we will fry 1 minute, after that we will add water in it and also let me tell you that if you have turning if there is no water left after pointing, you You can also use normal water but if there is water for those, then its taste is very high, try to boil it in a little more water so that some water is saved and it will be useful at the time of gravy, then see this for 2 to 3  minutes has taken and the Chickpeas and gravy have mixed well. Now we add water in it. This is the same water from the Chickpeas. Now we will add it and mix it and make the good Gravy. So if you feel this water is less then you add some simple water. So I have put only one glass because the has taken is good condition, we only need a little gravy of this and along with it, when the water becomes a little hot, we add it one spoon of Black Pepper Powder. We add two spoons of Chicken Powder for increase the Flavor. If you do not have Chicken Powder and chicken, you can add two Chicken Cubes. It is optional but if we add even one of these things then its flavor will become very good, so now we mix it, itself looks quite good but we will mix it so that the taste of Black Pepper and Chicken Powder come together well in of the Chickpeas, then see that the color of the of the Chickpeas has changed we wanted the same color and let me tell you that we will keep the flame medium, till now all this cooking is being done on medium flame. So see this Chickpeas, it has turned out so well, a very nice watch has also been made, i will cook it for some more time so that now we have added water and added the rest of the things, we all have the taste today, so we will add in it. There are 4 to 5 whole Green Chillies, we will not add anything more than this, now we will mix it a little and after that we will cover it and keep it, with all these things Taste is very good. It is amazing that after adding water, it seems as if there is no oil but there is a good amount of oil in it, initially we had put one cup and then we had put more because we will not make again, so see now, we started covering it. This is on low flame for 10 minutes, then after 10 minutes we check it, see that all the oil has come up, see that all the oil is there, this is the light let which is visible and the Chickpeas that is there is absolutely perfect. This has been made, its thickness is also amazing, so the Chickpeas is ready.
